1 pound refrigerated or shelf stable gnocchi 1 pound cherry tomatoes 4 ounces button mushrooms 1⁄2 cup black olives 1 tsp Greek seasoning 3 tsp olive oil 7 ounces block feta cheese

1/2 lemon, juiced and zested 1 cup baby arugula 1/2 cup fresh basil 2 T dry wine salt and pepper

Step 1

Pre heat the oven to 375F. Add gnocchi, tomatoes, mushrooms and olives to a baking sheet pan. Drizzle with olive oil and toss to coat. Sprinkle 1 T Greek seasoning, salt and pepper. Toss again to coat evenly with the seasoning.

Step 2

Push the gnocchi and cherry tomato mixture to the sides of the pan a bit and place the block of feta cheese in the middle of the sheet pan.

Transfer to the oven and bake 25-30 minutes until the gnocchi become slightly browned and the cherry tomatoes are blistered and juicy.

Toss everything together to turn the feta into a creamy sauce.

Add lemon juice, lemon zest, arugula or spinach, fresh basil and wine or stock. Gently toss. Taste and adjust the seasonings.
