Bursting with mediterranean flavors this baked gnocchi recipe is going to please you so much. Youโ€™ll need simple ingredients like cherry tomatoes, black olives, button mushrooms and feta cheese to make this delicious, flavourful and bright gnocchi recipe.

Winter is here and this cheesy, creamy warm comfort food is perfect for this season. Recently feta pasta recipes are going viral on TikTok, so I thought letโ€™s give it a try but with a twist!

Even though this is a filling dish, but over all recipe is below 350 calories per serving.

Many people actually confuse gnocchi with a type of pasta. While gnocchi did originate from Italy it is actually a small dumpling made from flour, egg and potatoes. There are so many different ways to flavor gnocchi, including my familyโ€™s favorite truffle gnocchi!

Baked Gnocchi Ingredients
  • Gnocchi (Note: Refrigerated or shelf stable gnocchi is called for in this recipe. Frozen gnocchi is not recommended.)
  • Cherry tomatoes โ€“ preferably multi-colored as this will make your dish more vibrant
  • Button mushrooms
  • Black olives
  • Greek seasoning
  • Olive oil
  • Feta cheese โ€“ if you donโ€™t have too much experience with feta cheese, then I highly recommend to get acquainted as this is a fantastic cheese of Greek origin made from sheepโ€™s milk, sometimes combination of sheep and goatโ€™s milk. It is formed in a block and aged in a brine. It has a crumbly texture and salty flavor. It melts very well, and creates a perfect cheesy and creamy texture.
  • Lemon juice and zest
  • Baby arugula or baby spinach
  • Fresh basil โ€“ this is a key ingredient as it really adds so much flavor to this dish. I would discourage using dried basil though in this recipe.
  • Vegetable stock or dry wine (only 2 T)
  • Salt and pepper

1| Heat oven to 375F/190C

2| Cut mushrooms in half

3| Add gnocchi, cherry tomatoes, cut mushrooms and olives to a large, rimmed baking sheet pan. Drizzle with olive oil and toss to coat. Drizzle with olive oil and toss to coat. Sprinkle with 1 tablespoon Greek seasoning, salt and pepper to taste. Toss again to coat evenly with the seasoning.

4| Push the gnocchi and cherry tomato mixture to the sides of the pan a bit and place the block of feta cheese in the middle of the sheet pan.

5| Transfer to the oven and bake 25-30 minutes until the gnocchi become slightly browned and the cherry tomatoes are blistered and juicy.

6| Toss everything together to turn the feta into a creamy sauce.

7| Add lemon juice, lemon zest arugula or spinach, fresh basil and wine or stock. Gently toss. Taste and adjust the seasonings.

  2. Add gnocchi, cherry tomatoes, mushrooms and olives to a large, rimmed baking sheet pan. Drizzle with olive oil and toss to coat. Sprinkle with 1 tablespoon Greek seasoning and salt and pepper to taste. Toss again to coat evenly with the seasoning.
