Apple Tarte Tatin (80 Minutes, Classic French Dessert)
Let me tell you something about French desserts. Most of them sound intimidating. Crème brûlée needs a torch. Croissants need 47 butter folds. But Tarte Tatin? It's the French dessert for the rest of us.
This Apple Tarte Tatin is a classic French upside-down apple tart. Caramelized apples baked under a layer of flaky puff pastry, then flipped onto a plate. The apples are buttery, sweet, and sticky. The pastry is golden and crisp. And the whole thing comes together with simple ingredients and a little patience.
The story goes that the Tatin sisters accidentally made this when they dropped a tart. Now it's one of France's most beloved desserts. And honestly? It's easier than you think.
Eighty minutes. One pan. And you've got a dessert that'll make you feel like a French pastry chef.
You'll need an 8-9 inch springform pan or ovenproof skillet, a rolling pin, a cutting board and knife, a pastry brush (optional), a serving platter, and a spatula.
Ingredients (Serves 8):
6-8 apples, peeled, cored, and cut into 8 even wedges (about 2 lbs / 900g)
½ cup (115g) unsalted butter, softened to room temperature
½ cup (100g) sugar
One 8-10 oz. sheet puff pastry (about 230-285g), thawed if frozen
Time: 20 mins prep + 60 mins cook + cooling | Serves: 8
Alright, let's make a French dessert that's easier than it looks. The key is patience let the apples caramelize properly.
First, preheat your oven to 400°F (200°C).
Spread the softened butter evenly over the bottom of an 8-9 inch springform pan or ovenproof skillet.
Sprinkle the sugar evenly over the butter layer.
Layer the apple wedges in a repeating circular pattern over the sugar. Pack them tightly they'll shrink as they cook.
Bake for 20 minutes or until the caramelized sugar is bubbling in between the apples. Remove from the oven and let cool completely. (Turn off the oven.)
Once the apples have completely cooled, preheat the oven to 350°F (180°C).
Roll out the puff pastry on a lightly floured surface to a circle slightly larger than your baking pan.
Place the pastry on top of the apples, tucking the edges down around the apples.
Bake for 20-30 minutes or until the pastry is golden brown and puffed.
Remove from the oven and cool for 10 minutes.
Place a serving platter on top of the pan. Quickly and carefully flip the pan so the apples are now on top of the pastry.
Serve warm. Top with whipped cream or vanilla ice cream.

Tips: Granny Smith, Honeycrisp or Fuji apples are all great choices to use in this recipe. A Tarte Tatin can also be made with other fruits such as pears or apporcots.
