Apple Tarte Tatin pinit

Let me tell you something about French desserts. Most of them sound intimidating. Crème brûlée needs a torch. Croissants need 47 butter folds. But Tarte Tatin? It’s the French dessert for the rest of us.

This Apple Tarte Tatin is a classic French upside-down apple tart. Caramelized apples baked under a layer of flaky puff pastry, then flipped onto a plate. The apples are buttery, sweet, and sticky. The pastry is golden and crisp. And the whole thing comes together with simple ingredients and a little patience.

The story goes that the Tatin sisters accidentally made this when they dropped a tart. Now it’s one of France’s most beloved desserts. And honestly? It’s easier than you think.

Eighty minutes. One pan. And you’ve got a dessert that’ll make you feel like a French pastry chef.

What You’ll Need to Do

Time: 20 mins prep + 60 mins cook + cooling | Serves: 8

Alright, let’s make a French dessert that’s easier than it looks. The key is patience let the apples caramelize properly.

Apple Tarte Tatin

First, preheat your oven to 400°F (200°C).

Spread the softened butter evenly over the bottom of an 8-9 inch springform pan or ovenproof skillet.

Apple Tarte Tatin

Sprinkle the sugar evenly over the butter layer.

Apple Tarte Tatin

Layer the apple wedges in a repeating circular pattern over the sugar. Pack them tightly they’ll shrink as they cook.

Apple Tarte Tatin

Bake for 20 minutes or until the caramelized sugar is bubbling in between the apples. Remove from the oven and let cool completely. (Turn off the oven.)

Once the apples have completely cooled, preheat the oven to 350°F (180°C).

Roll out the puff pastry on a lightly floured surface to a circle slightly larger than your baking pan.

Apple Tarte Tatin

Place the pastry on top of the apples, tucking the edges down around the apples.

Apple Tarte Tatin

Bake for 20-30 minutes or until the pastry is golden brown and puffed.

Remove from the oven and cool for 10 minutes.

Apple Tarte Tatin

Place a serving platter on top of the pan. Quickly and carefully flip the pan so the apples are now on top of the pastry.

Serve warm. Top with whipped cream or vanilla ice cream.

Enjoy!

Easy Ingredient Swaps

No Granny Smith apples? Use Honeycrisp, Braeburn, or Pink Lady.

No unsalted butter? Use salted butter and reduce added salt.

No white sugar? Use brown sugar (will be darker and more molasses-y).

No puff pastry? Use pie crust or shortcrust pastry.

No springform pan? Use an ovenproof skillet (cast iron works great).

Add spices: Add ½ tsp cinnamon or nutmeg to the sugar.

Add vanilla: Add 1 tsp vanilla extract to the butter.

Some Twist and Tweak Ideas

Pear tatin: Use pears instead of apples.

Spiced version: Add cinnamon or nutmeg to the sugar.

Vanilla version: Add vanilla extract to the butter.

Caramel version: Use brown sugar for a deeper caramel flavor.

Nutty version: Sprinkle chopped pecans or walnuts over the sugar before adding apples.

Cranberry version: Add fresh cranberries between the apples.

Salted caramel version: Sprinkle with sea salt before serving.

Some Helpful Tips

Use firm apples. Granny Smith, Honeycrisp, or Braeburn hold their shape. Soft apples turn to mush.

Cut apples into even wedges. Uniform size = even cooking.

Pack apples tightly. They shrink as they cook. Tight packing = no gaps.

Let apples cool completely before adding pastry. If they’re warm, the pastry will melt and get soggy.

Don’t skip the 10-minute rest after baking. The caramel needs time to set.

Flip quickly and confidently. Place the platter on top, hold firmly, and flip in one smooth motion.

Some Budget-Friendly Tips

Apples are cheap. Buy a bag. Use what you need, save the rest.

Puff pastry is affordable. A box costs a few dollars. Keep one in the freezer.

Butter in bulk. Buy on sale. Freeze extra sticks.

Sugar is cheap. Store brand is fine.

Use a cast iron skillet. No need to buy a special pan. Cast iron works perfectly.

Make a double batch. Twice the tarte tatin. Same amount of work. Feed a crowd.

Some Serving Ideas

Apple Tarte Tatin

As dessert. Classic. Serve warm with vanilla ice cream.

For a dinner party. Impressive and delicious.

With whipped cream. Light and airy.

With ice cream. Vanilla bean is the classic choice.

With crème fraîche. Tangy and rich.

For a crowd. Cut into wedges. Serve on a platter.

For brunch. Serve with coffee.

Some Storage and Reheating Tips

Fridge: Store in an airtight container for up to 3 days. The pastry may soften slightly, but the flavors remain excellent.

Freezer: Not recommended. The pastry texture will change.

Reheating:

  • Oven (best): 350°F for 8-10 minutes.
  • Microwave: 30-45 seconds per slice (pastry will be soft).

Do not reheat more than once. Take out only what you’ll eat.

Final Thoughts

Look, I love a fancy French dessert. But I don’t love spending all day in the kitchen. This Apple Tarte Tatin is my solution.

Caramelized apples. Golden, flaky puff pastry. Sweet, buttery, sticky, and so good.

Eighty minutes. One pan. Eight servings. And a dessert that looks like it came from a Parisian bakery.

Make it for a dinner party. Make it for a special occasion. Make it for a Tuesday when you want to feel fancy.

However you serve it, you’re getting a French dessert that’s anything but boring.

Now go peel some apples.

P.S. If you try the pear version, let me know. That’s my go-to upgrade. Pears and caramel? So good.
