Place the potatoes into a pot, sprinkle with some salt and cover with warm water. Bring to a boil and cook the potatoes for 15 minutes, or until tender. Once cooked, drain the potatoes, place in a large bowl, and set aside to cool.
2 In a separate bowl, mash the avocados, then add the remaining ingredients and season with slat and pepper. Add the mixture to the bowl with the potatoes and stir gently to combine.
3 Serve straight away, or cover and chill in the refrigerator for later.
