Boiled potatoes mixed with mashed avocado, bell peppers, onions, and spiced with Dijon mustard, lime juice, and pepper flakes.

Instructions

  1. Place the potatoes into a pot, sprinkle with some salt and cover with warm water. Bring to a boil and cook the potatoes for 15 minutes, or until tender. Once cooked, drain the potatoes, place in a large bowl, and set aside to cool.

  2. In a separate bowl, mash the avocados, then add the remaining ingredients and season with slat and pepper. Add the mixture to the bowl with the potatoes and stir gently to combine.

  3. Serve straight away, or cover and chill in the refrigerator for later.
