Let me tell you something about salads. Most of them are either boring lettuce with dressing or heavy pasta salads. This Couscous and Fresh Green Apple Salad is the perfect middle ground light, fresh, vibrant, and packed with crunch.
We're talking pearl couscous tossed with crisp Granny Smith apples, a mountain of fresh herbs (parsley, dill, mint, basil), and a simple lemon-olive oil dressing.
It's bright, herby, and so refreshing. The apples add sweetness and crunch. The herbs add freshness and color. The lemon dressing ties it all together.
Thirty minutes. One bowl. And you've got a salad that's perfect for lunch, a side dish, or a light dinner.
You'll need a pot for couscous, a large serving bowl, a cutting board and knife, a citrus juicer, a small bowl or jar for the dressing, and a spoon or spatula for tossing.
Alright, let's make a couscous salad that's fresh, herby, and so easy.
First, cook the couscous. Bring a pot of lightly salted water to a boil. Add the pearl couscous and cook according to package instructions until al dente. Drain and set aside.
While the couscous cooks, prep the apples and herbs. Chop the Granny Smith apples into small, bite-sized pieces. Chop the parsley, dill, mint, and basil.
In a large serving bowl, combine the apples, parsley, dill, mint, and basil. Toss to combine.
Add the cooked couscous to the bowl. Combine with the apple and herb mixture.
Make the dressing. In a small bowl or jar, combine the lemon juice, olive oil, and a pinch of salt. Whisk or shake until combined.
Pour the dressing over the salad. Gently toss to combine.
Serve immediately. Or refrigerate for later.
Enjoy with a fork. Get some couscous, some apple, and some herbs in every bite.
