Ingredients
2shallots, shallots, finely diced
1/2tsp dried oregano
1/2tsp fresh thyme leaves
1/2tsp fresh rosemary, chopped
4 eggs, whisked
2 egg whites
2.1oz. goat’s cheese (60g)
1tsp. honey
Instructions

Heat 1 tablespoon of olive oil in a non-stick skillet over low heat. Add the finely diced shallots and sauté for 5 minutes until translucent.

Add the dried oregano, fresh thyme, and fresh rosemary. Cook for an additional 5 minutes, stirring occasionally.

In a separate bowl, whisk together the 4 whole eggs and 2 egg whites. Season with salt and pepper to taste.

Add another 1 tablespoon of olive oil to the skillet. Pour in the whisked eggs.

Increase the heat to medium and cook until the eggs begin to set around the edges.

Crumble the goat cheese over the top and drizzle with honey.

Continue cooking until the cheese melts and the bottom of the omelette browns slightly.
