These Mini Blueberry and Lemon Cheesecakes are creamy, fruity, fresh, and completely no-bake. The base is made with almonds, Medjool dates, and coconut oil, while the filling combines cashews, lemon, maple syrup, blueberries, and coconut oil into a smooth little cheesecake layer. They’re especially handy when I want an individual dessert that looks a little fancy without actually making life complicated.
I love these Mini Blueberry and Lemon Cheesecakes when I want a creamy little dessert without turning on the oven! 🫐🍋 Cashews, blueberries, lemon, almonds, and dates make them fresh and fruity.
Ingredients
For the base:
3.5ounces almonds (100 g)
2ounces Medjool dates, pitted (55 g)
2tablespoons coconut oil
For the blueberry lemon cheesecake filling:
3.5ounces cashews, soaked overnight and drained, or boiled for 5 minutes and drained (100 g)
2tablespoons fresh lemon juice (30 ml)
4tablespoons coconut oil, melted
3tablespoons maple syrup
For layering and garnish:
5.3ounces blueberries, fresh (150 g)
Instructions
1
Place the almonds and pitted Medjool dates in a food processor.
2
Process until the ingredients form a fine, crumb-like mixture.
3
Add the coconut oil and continue processing until the mixture begins to hold together when pressed.
4
Divide the mixture evenly between six silicone muffin molds.
5
Press each portion firmly into the base of the mold using the back of a spoon, a small glass, or clean fingers.
6
Transfer the molds to the freezer while preparing the cheesecake filling.
7
Drain the soaked or boiled cashews thoroughly.
8
Place the cashews, lemon juice, melted coconut oil, and maple syrup in a high-speed blender or food processor.
9
Blend until completely smooth and creamy, scraping down the sides as required.
10
Remove the prepared bases from the freezer.
11
Place a few whole blueberries over each base.
12
Divide the lemon-cashew cheesecake filling evenly between the six molds, spooning it over the blueberries.
13
Smooth the tops gently.
14
Garnish each cheesecake with the remaining whole blueberries.
15
Return the molds to the freezer and chill for 2–3 hours, or until the cheesecakes are firm.
16
Remove the cheesecakes from the molds once fully set.
17
Allow them to soften at room temperature for approximately 15–20 minutes before serving, or transfer them to the refrigerator about 1 hour before serving.
