This Chickpea Sweet Potato Coconut Curry is creamy, cozy, and full of simple plant-based ingredients. Sweet potato, chickpeas, red bell pepper, spinach, coconut milk, and curry spices all simmer together in one pot, giving you a rich curry with very little fuss. I like finishing each bowl with fresh lime because it cuts through the creamy coconut sauce and makes the whole dish taste brighter.
