This Nutty Tofu Sweet Potato Bowl is colorful, filling, and packed with a good mix of flavors and textures. You get roasted sweet potatoes, savory tamari tofu, fluffy quinoa, green peas, fresh salad leaves, and crisp radishes, then everything gets finished with a creamy peanut-lime dressing. I especially like this one for lunch because it feels substantial without requiring anything complicated.
The bowl contains several mild ingredients, especially quinoa, tofu, and sweet potato, so the dressing needs enough flavor to bring everything together.
Peanut butter provides richness, tamari adds salty umami flavor, lime brings acidity, sriracha adds heat, and maple syrup gives just enough sweetness to balance it all.
That combination works particularly well with roasted sweet potato.
Some Budget-Friendly Tips
Use store-brand peanut butter and quinoa.
Frozen peas are usually inexpensive and eliminate prep work.
Buy tofu in multipacks if you use it often.
Sweet potatoes are usually economical and help make the bowls more filling.
Regular soy sauce can replace tamari if gluten isn't a concern.
Use whichever salad greens are on sale.
You can also increase the quinoa slightly and use fewer salad greens if you need to stretch the recipe.
Most of this recipe works very well for meal prep.
Cook the quinoa, sweet potato, peas, and tofu ahead of time and refrigerate them in separate or divided containers.
Keep the salad leaves and dressing separate until you're ready to eat.
This prevents the greens from wilting and keeps the bowl much fresher.
Some Storage and Reheating Tips
Store the cooked quinoa, tofu, peas, and sweet potato in airtight containers in the refrigerator for up to 3 days.
Keep the salad leaves, radishes, and dressing separately if possible.
Reheat the tofu, quinoa, and sweet potato in the microwave or in a skillet until warmed through.
You can also eat the bowl cold if you prefer.
If the peanut dressing thickens in the refrigerator, stir or shake in a teaspoon or two of water before serving.
I would not recommend freezing the fully assembled bowl because the salad leaves and dressing won't thaw particularly well.
