This Chicken and Walnut Stuffed Pumpkin is one of those recipes that looks impressive the moment it lands on the table. A small pumpkin gets roasted until tender, then filled with savory chicken, tomato, onion, garlic, herbs, cherry tomatoes, and toasted walnuts before going back into the oven. The pumpkin itself becomes part of the meal, so every serving gets a little sweet roasted pumpkin alongside the hearty filling.
What You’ll Need to Make Chicken and Walnut Stuffed Pumpkin
Prep Time: 25 minutes
Cook Time: 70 minutes
Total Time: 1 hour 35 minutes
Serves: 4
Course: Main Course / Dinner
1 small sugar or pie pumpkin, about 3 pounds
6 ounces walnuts
1 tablespoon olive oil
1 medium sweet onion, diced
1 pound boneless, skinless chicken breast, cut into bite-size pieces
3 garlic cloves, minced
7 ounces tomato purée
1 cup water
1 ounce fresh basil, chopped
1 ounce fresh parsley, chopped
6 ounces cherry tomatoes
1 small Fresno pepper, finely diced, optional
Sea salt, to taste
Black pepper, to taste
What You’ll Need to Do
→ Start by preheating your oven to 375°F (190°C).
→ Line a baking sheet with parchment paper.
→ Now carefully cut the top off the pumpkin in one piece so you can use it as a lid later.
→ Scoop out the seeds and stringy pulp from the inside. You want a clean cavity, but don't scrape away the actual pumpkin flesh.
→ Put the lid back on, place the pumpkin on the prepared baking sheet, and roast for about 45 minutes.
→ The pumpkin should be starting to soften but still sturdy enough to hold the filling. Exact timing will depend on its size and shape.
→ While the pumpkin roasts, toast the walnuts.
→ Add them to a dry skillet over medium heat and cook for about 5 to 6 minutes, stirring often, until fragrant.
→ Keep an eye on them because walnuts can go from toasted to burnt surprisingly quickly.
→ Transfer them to a cutting board, let them cool slightly, then roughly chop them.
→ Now make the chicken filling.
→ Heat the olive oil in a large deep skillet over medium heat.
→ Add the diced onion and cook until softened and translucent.
→ Add the chicken and cook until the pieces are lightly golden on the outside.
→ Stir in the garlic, tomato purée, and water.
→ Cover the skillet, reduce the heat, and let everything simmer gently for about 20 minutes, until the chicken is fully cooked and the sauce has thickened slightly.
→ Once the pumpkin has finished its first roast, carefully remove it from the oven.
→ Take off the lid and let the pumpkin cool just enough that you can safely work with it.
→ Stir the toasted walnuts, basil, parsley, cherry tomatoes, and Fresno pepper, if using, into the chicken mixture.
→ Season with salt and black pepper to taste.
→ Spoon the filling into the pumpkin cavity.
→ Don't worry if you have a little filling left over. It can be served alongside.
→ Return the stuffed pumpkin to the oven and roast for another 20 to 25 minutes, until the pumpkin is tender and the filling is hot all the way through.
→ Serve warm, scooping some roasted pumpkin flesh along with the chicken filling for each portion.
For leftovers, remove the filling and pumpkin flesh from the shell and transfer them to an airtight container.
Store in the refrigerator for up to 3 days.
Reheat individual portions in the microwave until hot throughout.
You can also place the leftovers in a covered baking dish and warm them at 350°F (175°C).
If you want to keep the whole stuffed pumpkin intact, refrigerate it covered, but it will be easier and safer to store the filling and pumpkin flesh in smaller portions.
I wouldn't recommend freezing the whole stuffed pumpkin because the texture of the pumpkin can become watery after thawing.
Final Thoughts
This Chicken and Walnut Stuffed Pumpkin is hearty, colorful, and just dramatic enough to make dinner feel special without being overly complicated.
The chicken and tomato filling is savory, the toasted walnuts add crunch, and fresh herbs keep everything bright.
The best part is scooping some of that soft roasted pumpkin into every serving.
It works beautifully for fall dinners, weekend meals, or any time you want a main course that doubles as its own serving dish.
