  1. In a medium mixing bowl, combine the Greek yogurt, minced garlic, lemon zest, fresh lemon juice, and ¾ teaspoon of sea salt. Whisk thoroughly until the mixture is smooth and well incorporated. Reserve the sauce for later use.
  2. Place the boneless, skinless chicken breasts into a 6-quart slow cooker. Season the chicken evenly with ¾ teaspoon of sea salt. Measure 6 tablespoons of the prepared yogurt sauce and pour it over the chicken. Toss to coat the chicken thoroughly in the sauce.
  3. Cover the slow cooker with its lid. Cook on the high setting for 2-4 hours or on the low setting for 4-6 hours, until the chicken is tender and fully cooked to an internal temperature of 165°F.
  4. Carefully remove the chicken from the slow cooker and transfer to a cutting board. Strain the remaining cooking liquid through a fine-mesh strainer, reserving 4 tablespoons of the strained liquid to return to the slow cooker.
  5. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker, along with the reserved 4 tablespoons of cooking liquid and an additional 6 tablespoons of the yogurt sauce. Toss to combine and heat on high for approximately 5 minutes, or until warmed through.
