Exploring the Key Ingredients: A Tropical Symphony
Pork Tenderloin: Let's kick off our culinary symphony with the maestro himself – the pork tenderloin. This lean cut serves as the canvas for our tropical masterpiece, ready to absorb the sweet and savory notes of our flavor-packed ensemble. Make sure the tenderloin cut is properly trimmed.
Pineapple Juice: Now, onto the star of the show – pineapple juice. This golden elixir infuses a burst of tropical sweetness, bringing a lively and refreshing twist to every juicy bite of the pork. It's the secret ingredient that turns our dish into a paradise on a plate.
Brown Sugar and Honey: Enter the dynamic duo – brown sugar and local honey. These sweet companions add a rich depth to our marinade, creating a luscious caramelization that will make your taste buds dance. It's the sweetness that balances the savory, ensuring a harmonious flavor profile.
Cinnamon Sticks and Cloves: Adding a touch of spice to our melody are cinnamon sticks and cloves. These aromatic wonders bring warmth and complexity to the dish, elevating it beyond the ordinary. Just a hint of these spices transforms our pork into a fragrant delight.
Fresh Ground Nutmeg: And now, a pinch of magic – fresh ground nutmeg. Its subtle nuttiness and warmth enhance the overall aroma, adding a layer of sophistication to our tropical creation. It's the final touch that makes each bite a nuanced experience.
Pineapple Slices: Last but certainly not least – the pineapple slices. These sweet jewels, strategically placed, not only contribute to the visual appeal but also provide delightful pockets of juiciness. It's the surprise element that keeps every forkful exciting. You may use fresh/canned either.
As we dive into the details of each ingredient, remember, we're not just cooking; we're orchestrating a tropical symphony on our plates. Get ready to conduct this culinary masterpiece and bring the flavors of the tropics into your home. Let the cooking adventure begin!

Preheat the oven to 375° F.
In a medium saucepan, combine the pineapple juice, brown juice, brown sugar, honey, mustard, cinnamon sticks, cloves, and ground nutmeg. Bring to a heavy simmer, then reduce the heat to medium-low, and allow the glaze to simmer until thickened, approximately 15-20 minutes.

Place the tenderloin in a 9"X13" baking dish. Make incisions 3/4-inch apart, taking care not to cut through the bottom, leaving 1/2-inch space under the tenderloin.

Brush one-half of the glaze all over the tenderloin and inside each incision.
Slice the pineapple slices in half and place into the incisions.

Bake until the internal temperature of the pork reaches 145° F, approximately 25-30 minutes. Remove from the oven and increase the heat to 400° F.

Brush the remaining glaze all over the tenderloin and the pineapple slices and return the tenderloin into the oven to bake for another 10 minutes or until slightly caramalized.

Remove from the oven and allow to rest for at least 10 minutes before serving. Enjoy!
*Note: Always cook meat to temperature, not by time. Actual cooking time will vary based on several factors, including internal starting temperature, individual oven variations, size and thickness of the meat, or what else is in the oven while cooking. The minimum safe cooking temperature for fresh pork is 145° F
