Let me tell you about the day I discovered this Slow Cooker Greek Chicken. I was staring at my fridge, completely uninspired, with a pack of chicken breasts staring back at me. I wanted something flavorful, something different, but I also didn't want to spend my evening slaving over the stove. Sound familiar?
Then I remembered the Greek yogurt in my fridge and had a lightbulb moment.
This recipe is proof that the slow cooker can be your best friend in the kitchen. We're talking incredibly tender, juicy chicken that's been marinated in a creamy, tangy lemon Greek yogurt sauce, cooked low and slow until it's falling-apart tender. The sauce doubles as a marinade AND a dipping sauce genius, right?
The best part? You literally toss everything in the slow cooker and walk away. Four hours later, you've got restaurant-quality Greek chicken that's perfect for meal prep, family dinners, or impressing guests. It's healthy, it's delicious, and it's embarrassingly easy.

Alright, this one's so easy, you'll wonder why you ever bothered with complicated chicken recipes. Let's get the slow cooker working for us!
Step 1: Grab a mixing bowl and whisk together the Greek yogurt, minced garlic, lemon zest, lemon juice, and ¾ teaspoon of sea salt. Give it a good stir until everything's combined and creamy. The smell of fresh lemon and garlic is already making my mouth water.
Step 2: Take your chicken breasts and place them in the slow cooker. Season them with another ¾ teaspoon of salt don't skip this, it seasons the meat from the outside in. Now, pour about 6 tablespoons of that gorgeous yogurt sauce over the chicken and toss everything around until the chicken is nicely coated. It doesn't need to be perfect just make sure the chicken gets some saucy love.
Step 3: Pop the lid on your slow cooker and set it to high for 2-4 hours or low for 4-6 hours. Go live your life work, watch TV, take a nap, whatever. The slow cooker's got this.
Step 4: Once the chicken is tender and cooked through, carefully remove it from the slow cooker and transfer it to a cutting board. Don't toss the cooking liquid it's packed with flavor! Strain it through a fine mesh strainer and reserve about 4 tablespoons of the liquid to add back to the slow cooker.
Step 5: Use two forks to shred that beautiful chicken into bite-sized pieces. It should practically fall apart that's how you know the slow cooker did its magic.
Step 6: Return the shredded chicken to the slow cooker, along with the reserved 4 tablespoons of cooking liquid. Add another 6 tablespoons of that reserved yogurt sauce and toss everything together. Let it warm through for about 5 minutes on high so all the flavors meld together.
Step 7: Serve the chicken with the remaining yogurt sauce on the side for dipping or drizzling. Trust me you'll want that extra sauce.
Fridge: Store in an airtight container for up to 4 days.
Freezer: Freeze for up to 3 months in a freezer-safe container.
Reheating: Warm gently in a skillet over medium heat or microwave until heated through.
Add moisture: If the chicken seems dry when reheating, add a splash of water or chicken broth.
Keep sauce separate: Store extra sauce separately to use as needed.
Meal prep tip: Portion into individual containers for grab-and-go lunches.
