1 (14-ounce/400 ml) can coconut milk
9.2 ounces (260 g) peanut butter
4 tablespoons fish sauce
Juice of 2 limes
1 tablespoon brown sugar
1-inch (2.5 cm) piece fresh ginger, minced
2 garlic cloves, minced
2 tablespoons Thai red curry paste
4 tablespoons tamari sauce
For the chicken and vegetables:
3 pounds (1.3 kg) chicken drumsticks
1 pound (450 g) baby bok choy
4 red peppers
1 tablespoon olive oil
0.5 ounce (15 g) cilantro, chopped
4 tablespoons chopped peanuts, for serving

What You’ll Need to Do
Start by making the sauce.
Add the cilantro, coconut milk, peanut butter, fish sauce, lime juice, brown sugar, ginger, garlic, Thai red curry paste, and tamari to a large food processor.
Blend until everything is smooth, creamy, and well combined.
Transfer the chicken drumsticks to a large zip-top bag or covered container.
Pour in 8 fluid ounces (240 ml) of the sauce and move the chicken around until every drumstick is nicely coated.
Place the chicken in the refrigerator and let it marinate for at least 30 minutes. If you have the time, leave it overnight for even more flavor.
