4.8oz unsweeteened desiccated coconut (135g)

1tbsp chia seed

Preheat the oven to 350°F (180°C). Line a large baking sheet with parchment paper and set aside.

In a small bowl, combine the ground flaxseeds with 3 tablespoons of cold water. Stir thoroughly and refrigerate for approximately 5-10 minutes, or until the mixture thickens to a gel-like consistency to form a "flax egg."

In a large mixing bowl, combine the mashed sweet potato and coconut sugar. Using an electric mixer, beat until smooth and well incorporated. Add the melted coconut oil and continue mixing until fully combined.
