Preheat the oven to 340F (170C). Prepare a baking sheet lined with baking paper.

Combine the olive oil, vanilla extract, eggs, coconut sugar and maple syrup in a bowl. Add the spelt flour, almond meal, and baking powder. Mix until well combined. Now work the raisins and walnuts into cookie dough.

Divide the dough into 12 even-sized balls and place on the baking sheet. Flatten the balls with your hands to form cookie shapes.
