Quick meat free taco recipe, with crumbled tofu baked with BBQ sauce and served in taco shells with a delicious homemade tomato salsa.
Preheat the oven to 400°F (200°C).
Line a rimmed baking sheet with a piece of parchment paper.
Add crumbled tofu to the prepared baking sheet and toss with olive oil, smoked paprika, cumin and oregano.

Season to taste with salt and pepper.

Bake until browned and crispy, approximately 15-do minutes.
Remove tofu from the oven and mix in BBQ sauce.


Return to oven and bake for an additional 5-10 minutes.
In the meantime, in a small bowl, mix sour cream, parsley, scallions, and lemon juice. Season with salt and pepper to taste.

Heat tortillas in the oven or in a skillet and fill with BBQ tofu, sour cream sauce, and homemade salsa.

Garnish with extra parsley on top. Enjoy!
