Roasted turmeric cauliflower nourish bowl is delicious, healthy and a pretty looking recipe which you can whip up in around 30 minutes without too much of active cooking. I have set this like a buddha bowl, but instead of rice, serve it with hummus and pita bread along with fresh crunchy vegetables. It is a versatile recipe and it can accommodate whatever veggies you have around.
Who doesn't like delicious bowls, make this bright salad bowl for lunch, dinner even you can serve this for healthy snacking. I have used my favorite crunchy vegetables alongside the roasted cauliflowers like red cabbage, cucumber, radishes and pickled red onions but you can add your own veggie options.
The recipe is pretty simple and requires very less active cooking, just toss the cauliflower with olive oil, curry powder, paprika, salt and pepper toss it into a preheated oven roast for 25 minutes. That's it.

Preheat the oven to 400F.
For easy clean up, line a large rimmed baking sheet with a piece of parchment paper.
In a large bowl, toss cauliflower florets with curry powder, ground cumin, smoked paprika, olive oil, salt and black pepper, to taste,
Arrange florets on the prepared baking sheet. Place in the oven to roast until fork-tender and crispy around the edges, 20-25 minutes.
Place a large dollop of hummus in the bottom of each serving plate. Follow with roasted cauliflower, red cabbage, cucumber slices, radishes, and pickled red onions.
Garnish with fresh parsley. Serve with pita bread for dipping. Enjoy.
