Ingredients:
- Quinoa – prefer organic
- Vegetable stock or water – I like to cook the quinoa with vegetable stock, which I keep ready almost all the time in my refrigerator but feel free to use water instead.
- Medium ripe avocado – slightly ripened avocado is needed, avoid use hard avo’s.
- Greek yogurt or Sour cream – both gives the same result so it’s your personal preference.
- Fresh parsley – this is what brings the bright green color in this recipe, so you must find fresh and green parsley.
- Fresh basil (optional)
- Green Onions, green part only (optional)
- Lemon, juiced
- Honey – in case you do not like honey then skip it completely, or add maple syrup instead
- Medium red onion
- Cherry tomatoes – regular tomatoes will work fine in case cherry tomatoes are not available in your pantry, but cherry tomatoes looks so cute in this recipe.
- Feta cheese – for my vegan friends, I have seen vegan feta cheese alternatives and you may use those to make this recipe vegan. The salty, crumbly, creamy, feta cheese adds a unique character in the recipe so make sure to add this.
- Sea salt and black pepper to taste
What you’ll need do to
Add quinoa and vegetable stock to a medium saucepan. Bring to a boil over medium heat. Reduce heat to simmer and cover pan with a lid.
Cook, covered, 10 to 12 minutes. Turn off heat and let quinoa sit, covered for an additional 5 minutes.
Meanwhile, scoop avocado flesh and add to blender.
Add Greek yogurt, parsley, basil, green onions, lemon juice, and honey. Blend until smooth and creamy. Season to taste with salt and pepper.
Fluff quinoa with a fork and add to a serving bowl. Toss with the avocado green goddess dressing.
Add red onion, cherry tomatoes, and feta cheese. Stir lightly to combine.
Can be served at room temp or chilled from the fridge. Enjoy!
