Off late I have been leaning towards making more vegan recipes, they are light relatively budget friendly and delicious. Tofu is an ingredients I had been using a lately and realized that it is a very versatile ingredient and you can come up with so many ways to make it.

Coming back to Tofu Skewers…
These tofu skewers are simply amazing, marinated with a delicious marinade and served with a peanut butter based sauce. These 30 minute tofu skewers are the ultimate vegan summer dish.
I serve these tofu skewers in more than one ways … they are great to be served as appetizers on entré or even you can serve them in your main course. Pair these tofu and vegetable skewers with rice/cauliflower rice/ noodles and big green salad on the side.
Baked or Grilled?
For this recipe I have baked the skewers but you can grill them too and the results will be as fantastic as it is. To grill them, place them on a preheated grill for 10-15 minutes, flipping once. They are done when the vegetables and tofu are slightly charred around the edges.

Serving and storing
Serve immediately: These tastes best served hot and fresh, drizzle the peanut butter sauce over them before serving.
Store leftover skewers in an air tight container in your refrigerator. Reheat them on stove of oven gently. The peanut butter sauce can be stored for up to 2 weeks in a cool dry place.
What you need to do

Step1: Place all the marinade ingredients (except for the water) into a bowl and mix well. Add the water 1 tablespoon at a time, mixing in between. Set aside.
Step 2: Transfer the vegetables and tofu into a large bowl and pour over the marinade. Stir gently until the tofu and all the vegetables are coated evenly in the marinade. Cover the bowl and set aside in the refrigerator to marinate for 1 hour. At the same time, if using wood skewers, soak them in water.
Step 3: Preheat the oven to 390°F (200°C).
Step4: Thread the vegetables and cubes of tofu onto 12 skewers, reserving the marinade. Place the skewers into a baking dish and pour the remaining marinade over the skewers. Place the dish into the hot oven and bake for 25 minutes, flipping the skewers over 15 minutes through the cook.
Step 5: To make the peanut sauce mix all of the sauce ingredients together in a bowl, stirring until well combined.
Step 6: Remove the skewers from the oven and serve with the peanut sauce. Sprinkle over the sesame seeds and freshly chopped cilantro.

Remove the skewers from the oven and serve with the peanut sauce. Sprinkle over the sesame seeds and freshly chopped cilantro.
