Falafel is a popular Mid-Eastern street food typically made with chickpeas or fava beans. It is often served in pita sandwiches, as part of an appetizer platter, or just as an appetizer or finger food. They are crispy on the outside and nice and tender inside.
Chickpea recipes are very common in any middle-eastern cuisine, and youโll find variety of falafel recipes in restaurants as well as on pretty much every street corner. Itโs a favorite no matter where you are.
Chickpeas or fava beans are used in different ways somewhere soaked or dried (mostly in Israel). While researching for falafel recipes I found in Ledanon they use for fava beans and chickpeas.
I have no experience with fava beans, so I decided to go with chickpeas which I am pretty used to with.
Crispy Baked Falafel with Lemony Tahini Sauce
Crispy from outside, light tender and crumbly from inside homemade falafel recipe which is perfect even for beginners. Served with fresh salad and a lemony tahini dressing for a perfect vegan snack meal.

Preheat the oven to 400F. Grease a large rimmed baking sheet with one tablespoon of olive oil.

In a food processor, add chickpeas, onion, garlic, parsley, cumin, salt and the remaining olive oil. Pulse a couple of times to break down the chickpeas, then process until a smooth and thick mixture forms, approximately 1-2 minutes.

Scoop 2 tablespoons of the mixture and form into a patty using your hands. Repeat until you've used all of the mixture. This should yield approximately 18 falafel patties.

Arrange falafels on the prepared baking sheet and place in the oven to roast until golden brown and crisp, approximately 25-30 minute, flipping halfway through the baking time.

In the meantime, make the tahini sauce. Whisk tahini and lemon juice in a small bowl. Lightly season with salt. The mixture will become very thick. Thin tahini sauce into desired consistency by adding water, 2 tablespoons at a time. Amount needed will vary based on liquid content of your tahini and lemon.

Arrange crispy falafel patties on a bed of leafy greens and fresh vegetables on the side.ย
