Vegetables and Tofu Stir Fry

This quick and easy tamari based tofu stir fry is loaded with fresh vegetables and plant based protein. Youโ€™ll enjoy sweet, chilly tangy taste which is very common in Asian stir fries, have it as it is or serve it white/brown rice or use noodles.

I like stir fry recipes a lot, I like to make them I also like order them many times a month. Stir fry recipes are actually very easy to make. Youโ€™ll need vegetables which do not need long cooking time, your choice of protein, and a tamari/soy sauce/coconut amino based sauce some cornstarch to thicken the gravy. Always use high flame/ high heat while making stir fry and never cover your fry pan otherwise vegetables will release water.

  1. For the tofu

    Heat 1.5 tablespoon of olive oil in a pot over a medium heat and gently sautรฉ the cubes of tofu, mixing frequently until lightly golden on all sides. Remove the tofu from the pot and set aside.

  2. Add the remaining olive oil to the pot and cook the garlic and ginger until fragrant. Now add the onions, mushrooms, bell peppers and broccoli and toss to combine. Sautรฉ gently until all the vegetables are cooked and tender.

  3. Meanwhile, whisk all the sauce ingredients together in a small bowl until well combined.

  4. Add the pan-fried tofu back into the pot with the vegetables. Then add the sauce and mix well until coated. Continue to cook for a few minutes and then add the pineapple and bok choy.

  5. Mix gently on a medium-low heat until the sauce starts to thicken. Turn off the heat and add the green onions. Toss together and serve hot, with a side of cooked brown rice.
