Simple and delicious winter beetroot salad like no other, if you like beetroots then you must try this simple beetroot salad. In our family beetroot was rarely used anywhere apart from some juices that we make during our post holiday detox sprints.
But one of my very good Ukrainian friend showed how versatile this root vegetable is, in fact Ukrainians and Russians are obsessed with beetroots. So, this is where I am starting my journey with Beetroots. Usually beetroots are used raw/boiled in salads, but I figured using greek yogurt will give it a smooth texture and will be much more interesting.

Winter Beetroot Salad
A simple tasty beet salad with a handful of ingredients with a creamy and lemony layer with a hint of cinnamon and garlic.

In a bowl, mix the yogurt with the lemon juice, olive oil, cinnamon, and garlic.

Mix the beetroots and 2/3 of the parsley with the yogurt and season with salt and pepper.

Garnish with the remaining parsley, and serve immediately.

Note
- If you do not like raw beetroots, then you can also use slightly boiled beets. Let it cool down and drain the water well.
