Traditional broccoli soups are made with cheese, but I decided to give it a twist and add sweet potatoes instead. I have tried to make broccoli soup with regular potatoes and they turned out okay but a bit bland and too starchy for my taste. That’s where I saw few recipes where sweet potatoes are used to make broccoli soup and I gave it a try which turned out to be be great.
The winter is here and it’s time to roll up our hands for some delicious soups, I am starting my soup season with this easy and my favorite version of broccoli soup.

Broccoli and Sweet Potato Soup
This broccoli sweet potato soup is warming, velvety and so delicious. Roasting the veggies amplifies their flavor for a creamy bowl of soup that will satisfy the pickiest of eaters.

Heat the olive oil in large saucepan over medium heat. Add the onion, broccoli stems and sweet potato and cook, stirring, for 5 minutes.

Add the stock and additional 2 cups (480ml) of cold water. Bring to the boil, then reduce the heat to low, and add broccoli florets. Cook for 15 minutes or until the sweet potato has softened.

Set aside to cool slightly, then use a hand-blender to blend the soup until smooth.

Divide the soup between 4 serving bowls, top with yogurt and gently swirl. Season to taste and serve immediately.
