Salvatore Denaro’s pollo alla diavola (“devil’s-style chicken”) is fiercely seasoned. Pollo alla diavola is traditionally grilled over wood embers, but the chicken may also be grilled over a charcoal or gas fire, or broiled in an oven, we are going to bake in the oven and use smoked paprika to mimic the flavors from charcoal grilling. Feel free to use different herbs of your choice and experiment with the marinade.
If you really want to go all in, then add white wine in the marinade and marinate for 2 days. In this recipe we are going to marinate for 1 hours only.
This recipe serves – 6, prep time: 15 minutes, cook time: 45min, marination: 1hour. Serve with potatoes, salad and your favorite red wine.
Chicken Alla Diavola (Devil’s Chicken)
Chicken alla Diavola, or “Devil’s Chicken”, is one of Italy’s most beloved chicken preparations. It’s typically grilled over an open flame (hence the name), but here we are using smoked paprika to emulate the flavor from the hot coals. If you don’t like spicy food, don’t worry - you can simply reduce or completely omit the spicy crushed red pepper flakes.

Place the chicken legs on a roasting tray and drizzle with lemon juice, then rub with salt, pepper, chili flakes, crushed garlic, olive oil, smoked paprika and Italian seasoning (if using).

Add chopped rosemary sprigs and set aside to marinade for about 1 hour.

Preheat the oven to 35oF (180C). Place the chicken in the oven and bake the chicken for 25 minutes, then turn over and bake for a further 20 minutes until golden brown. Once cooked, pour the roast juices over the chicken.

Divide the chicken into 6 portions and serve immediately with your favorite side dishes, e.g. potatoes, salad.
