Combine cherries, sugar and lemon juice in a medium skillet over medium heat.

Cook, stirring occasionally, until the sugar is dissolved and the cherries release their juices, approximately 6-7 minutes.

Remove the skillet from the heat and pour in the rum. Carefully ignite the alcohol with a utility lighter and return the skillet back to medium heat.

Gently shake the pan with the cherries until the flame extinguishes itself.

Stir the cherries and continue cooking for another minute.

If you prefer the skip flambรฉing, you could just cook out the alcohol on the stovetop or skip the alcohol altogether and add a splash of cherry juice and vanilla extract in its place.

Spoon the cherry jubilee over vanilla ice cream and top with almonds or cookies, if desired.
