Crispy Herb Tofu Sandwich

What you need to do

Add the nutritional yeast, cornstarch, garlic powder, thyme, olive oil and tamari to shallow bowl and mix well to form a batter.

Cut the tofu lengthwise into 4 even-sized pieces. Take each piece of tofu and dip it into the batter, taking time to coat it evenly. Place the tofu into an air fryer basket and cook at 400F (200C) for 15 minutes.

Assemble the sandwich by spreading the red pesto equally over each slice of bread. Top 4 slices of bread with a layer of spinach and crispy tofu. The add a slice or two of tomato and season to taste with salt and pepper. Finish each sandwich by topping it with another slice of bread.
