Chicken Avocado Panini

Chicken avocado panini - a classic grilled sandwich with grilled chicken, avocado, tomato, spinach, cheese and Dijon mustard. A great make-ahead lunch that is full of flavor!

Creamy avocado, melted mozzarella, fresh spinach and sliced garden tomatoes perfectly complement the grilled chicken breast in this delicious panini. To save time, you could substitute rotisserie chicken breast or off-the-bone chicken breast from the deli counter. To add a little extra kick, arugula or baby power greens would be a nice alternative to the baby spinach.

If you have one, a panini press is the best tool for preparing this recipe. However a grill pan (or even a large skillet) can also be used. Use a clean heavy cast iron skillet or a spatula to press down on the roll while toasting for best results. Cover the skillet/grill pan for a minute for a minute while toasting which will help the cheese melt better (but be careful not to burn the breads).

What you’ll need:

Chicken Avocado Panini

1| Bread – use white or sourdough bread or any other kind if you may prefer.

2| Grilled chicken – I have used homemade grilled chicken breast

3| Avocados, Tomato, Spinach

4| Shredded mozzarela

5| Olive oil and Dijon mustard

What you’ll need to do:

1| Slice avocado, tomato and grilled chicken into thin/medium sizes

2| Spread Dijon mustard uniformly over two bread slices.

3| Layer chicken, avocado, tomato and spinach as shown below

4| Add handful of shredded mozzarella cheese

5| Grill in the panini spread according to manufacturer instructions

  6| Remove sandwiches from press, cut in half, serve with fries and/or choice of side dishes and enjoy!

Instructions

  1. Heat panini press according to manufacturer instructions.

  2. Spread one teaspoon of Dijon mustard onto each bread slice.

  3. Top 2 slices of bread with one-half each of the chicken, avocado, tomato, baby spinach, and shredded mozzarella. Add remaining bread to top to from a sandwich.

  4. Brush the paninis on both sides with the olive oil and grill until until the bread is golden-brown on all sides and the cheese is melted, 6-8 minutes or according to manufacturer's instructions.

  5. Remove sandwiches from press, cut in half, serve with fries and/or choice of side dishes and enjoy!
