What you’ll need to do
Prep time: 10 mins Cook time: 45 mins
Alright, let’s get cooking our Spicy Maple Tofu Bowl!
Garlic Rice:
1| Heat up a medium pot over medium heat. Drizzle in some olive oil and let it swirl around. Now, toss in the garlic and turmeric. Sauté it until you catch that delightful aroma, about 30 seconds.
2| Next, add in the rice and give it a good stir to coat it in that lovely, spiced-up oil. Pour in the vegetable broth, season with a pinch of salt and pepper, and bring it all to a nice, cozy boil. Once it’s bubbling away, lower the heat to a gentle simmer, pop a lid on top, and let it do its thing for about 45 minutes until the rice is tender and has soaked up all that flavorful broth. Once it’s done, take it off the heat and set it aside.
Tofu & Broccolini:
3| While the rice is simmering away, grab your tofu and pat it dry with a kitchen towel to get rid of any extra moisture. Cube it up and toss those cubes in a bowl with cornstarch, salt, and pepper. Give it all a good mix and set it aside for now.
4| In a small bowl, whip together the maple syrup, sambal oelek (or gochujang if you prefer), tamari sauce, rice vinegar, and garlic. Set this magical sauce aside.
5| Trim the ends off your broccolini and slice any thicker stalks lengthwise. Grab a nonstick skillet, set it over medium heat, and add just enough water to cover the base. Once it’s simmering nicely, add in the broccolini, pop on a lid, and let it steam for about 5 minutes until it’s vibrant green but still has a bit of bite. Take it out, season with a bit of salt and pepper, and set it on a plate.
6| Wipe out your skillet and put it back on the stove over medium heat. Pour in a splash of olive oil and let it heat up. Now, carefully place half of your tofu cubes into the skillet. Let them sizzle and get beautifully golden on one side, about 3-5 minutes. Flip them over gently and let the other side get that same golden treatment, another 3-5 minutes. Once they’re nicely browned, transfer them to a plate. Repeat this with the rest of the tofu, adding a touch more oil if needed.
7| Once all your tofu is back in the skillet, pour over that irresistible maple syrup and sambal oelek sauce. Let it bubble up and then reduce the heat to a simmer. Keep spooning that luscious sauce over the tofu as it thickens up, about 5 minutes or so until it’s nicely coated. When the sauce has reduced by about half, toss in your steamed broccolini and give it all a good stir to warm through.
Serving:
8| Time to plate up! Serve your spicy maple tofu and broccolini alongside that fragrant golden garlic rice. Sprinkle over some sliced green onions for that final touch of freshness and flavor. Enjoy your delicious creation!

Some useful tips for the recipe
Here are some useful tips to enhance your experience with the Spicy Maple Tofu Bowl recipe:
1| Pressing Tofu: Before cubing the tofu, press it between clean kitchen towels or using a tofu press to remove excess moisture. This helps the tofu achieve a crispier texture when cooked.
2| Marinating Time: For deeper flavor, marinate the tofu cubes in the maple syrup, sambal oelek (or gochujang), tamari sauce, rice vinegar, and garlic mixture for at least 30 minutes before cooking. This allows the flavors to infuse into the tofu.
3| Steaming Broccolini: To ensure the broccolini is cooked perfectly, steam it just until it turns bright green and remains slightly crisp. Overcooking can lead to mushy texture and loss of nutrients.
4| Golden Garlic Rice: Toasting the garlic and turmeric with the olive oil before adding the rice enhances their flavors. Stir frequently to prevent burning and ensure even distribution of spices.
5| Crispy Tofu Technique: When frying the tofu, ensure the skillet and oil are hot before adding the tofu cubes. Let them cook undisturbed for a few minutes on each side to achieve a crispy golden exterior.
6| Sauce Reduction: When simmering the maple syrup and spice mixture with the tofu, continue simmering until the sauce thickens slightly and coats the tofu evenly. This ensures each bite is packed with flavor.
7| Garnishing: Before serving, garnish the Spicy Maple Tofu Bowl with sliced green onions or other fresh herbs. This adds a pop of color and freshness to the dish.
8| Customization: Feel free to adjust the spice level by increasing or decreasing the amount of sambal oelek (or gochujang) according to your preference. Similarly, you can swap out vegetables or add additional toppings to suit your taste.
These tips will help you achieve a delicious and satisfying Spicy Maple Tofu Bowl every time, with flavors that are balanced and vibrant. Enjoy your cooking adventure!

For the tofu and broccolini
Instructions
-
Step 1:
To make the rice, place a medium pot over medium heat. Add the olive oil and swirl it around, then add the garlic and turmeric and sauté until fragrant, about seconds.
-
Step 2:
Add the rice to the pot and stir to coat in the oily spice mixture. Add the vegetable broth, salt, and pepper, and bring to a boil. Once boiling, lower the heat to a simmer, place a lid on top, and cook until all liquid has been absorbed and rice grains are tender, about 45 minutes. Take the rice off the heat.
-
Step 3:
Meanwhile, place the tofu cubes on a clean kitchen towel and press to remove any excess moisture. Place the tofu in a bowl and toss with the cornstarch, salt and pepper, then set aside.
-
Step 4:
In a small bowl, whisk together the maple syrup, sambal oelek, tamari, rice vinegar and garlic. Set aside.
-
Step 5:
Trim the ends off the broccolini and cut any thick stalks in half lengthwise. Set a medium nonstick skillet over medium heat. Pour enough water into the skillet to cover the base of the pan. Bring to a simmer, add the broccolini, and put the lid on top. Steam the broccolini for around 5 minutes, until bright green but still firm. Remove the broccolini, set aside on a plate and season with salt and pepper.
-
Step 6:
Wipe out the skillet and return it to the stove over medium heat. Pour in the olive oil, and once the oil is hot, carefully add half of the tofu to the skillet. Let the tofu pieces sit until deeply browned on the bottom, about 3-5 minutes. Carefully flip the pieces over and brown the other side as deeply as you can, this should take a further 3-5 minutes. Place the tofu on a plate and repeat this cooking process with the remaining tofu, adding more oil if necessary.
-
Step 7:
Get all the tofu back into the skillet and pour over the maple syrup and sambal oelek mixture. Bring the liquid to a boil, then turn down the heat and simmer until slightly thickened, spooning the sauce over the tofu as the sauce reduces. Once the liquid has reduced by half, around 5 minutes, add the broccolini to the skillet and toss in the warm sauce.
-
Step 8:
Serve the spicy maple tofu and broccolini with the garlic rice and sliced green onions.
