In a medium bowl, add just enough warm vegetable stock to cover lentils to begin to soften.

Heat stock pot over medium heat.ย Add chili flakes and let cook for 1 minute to release their oil.

Add olive oil, onion and carrots. Sautรฉ for 4-5 minutes until vegetables begin to soften.

Add tomatoes, lentils, and remaining stock.ย Simmer 10-12 minutes or until carrots are tender.ย

Add milk and bring just to a boil. Reduce heat and simmer 10 minutes until lentils and vegetables are fully cooked.

Add cilantro.

For a smooth texture blend with an immersion blender.
