If you are looking for an easy recipe to prep ahead for easy lunches or dinners during the week then this is perfect recipe. I have kept the recipe super simple, with common ingredients which will help you in meal prep with ease.
How To Make Taco Bowls
As like most meal prep recipes this recipe is also versatile and change the combination according to you, this particular set up gives a good balance of macro nutrients and the flavors complement each other just like in traditional Mexican meals. Turkey provides lean protein, with brown rice adding the healthy carbs and avocados will provide with the necessary healthy fat with tomatoes filling in for veggies.
It starts with taco seasoning. I usually make my own taco seasoning (check out this recipe for homemade taco seasoning), in this recipe though I have used a store bought taco seasoning as I had that handy.
I like turkey with taco seasoning, but you can also use lean ground beef, or ground chicken too the recipe remains the same in any case.
The rice component: use any kind of rice you prefer, I have used brown rice here. (You can also add cilantro rice, that would add extra flavors). If you want to skip the rice to keep it low carb, swap the rice with cauliflower. (Keto cauliflower rice)
Once you are done with your turkey and rice then all you have to do is assemble the bowls.
- Add a portion of Turkey
- Add sweet corn
- Add tomato salad
- Add rice and a slice of avocado
- Other optional add-ins can be โ black beans, pinto beans, kidney beans, shredded cheese, chopped cilantro
How Long To Taco Meal Prep Bowls Keep?
These turkey bowls will last between 3 to 4 days in the refrigerator. Be sure you use airtight containers!

Heat the olive oil in a large skillet and over a medium heat, add the ground turkey and cook for about 10 minutes. Season the turkey with the taco seasoning and add the water. Stir to combine and simmer for a couple of minutes, until the sauce has thickened. Remove from the heat and set aside.

Combine all salsa ingredients in a bowl and set aside.

Assemble the bowls by dividing the ground turkey, sweetcorn, avocado, cooked rice and tomato salsa, equally 4 storage boxes with tight fitting lids. Seal the boxes and store in the refrigerator for up to 4 days. Enjoy cold, or heat in the microwave.
